How does an office chair mechanism works?

If you're referring to the lever that allows the height to be adjusted, it's quite simple.
In the stem column underneath the seat, there is a cylinder which has been filled to a high pressure with nitrogen gas. With no weight on the chair, the cylinder expands, moving the seat up. The weight of a human is usually enough to overcome the pressure in the cylinder, forcing the cylinder back in.
Now, the handle is basically a clutch to hold the cylinder in place. Normally, the clutch is engaged, which prevents the seat from moving up or down. When the lever is pulled, the clutch is released, allowing the cylinder to either move up or down, depending on the amount of force that is resting on it. With some particularly heavy people, their weight is enough to overcome the holding force of the clutch, and the seat will sink down regardless of whether the clutch is engaged or not.
